Come March Madness, I started splurging on chicken wings (what's a basketball game without wings?) and soon realized how bad it was for me when I stumbled upon the ingredients. Deep fried wings, 1/2 cup butter, all purpose flour, WHAT? So I decided to make up my own recipe for equally delicious chicken wings and it's surprising how easy they are to make and so much healthier! Time to enjoy some guilt-free wings :)
1 kg or about 2 lb chicken wings, skinned as much as possible
1 tsp. ginger-garlic paste
1 tbsp. corn flour
For the sauce:

1 tbsp oil

2 large cloves of garlic, minced
1 tbsp. soy sauce
1 1/2 tbsp vinegar
1/2 tbsp. white cooking wine

2 tsp. freshly ground black pepper
1 tbsp. hot and sweet sauce (or a mixture of hot sauce and tomato ketchup)
1 tsp. corn flour
1/2 tsp. red chili powder
1/2 cup chopped scallions (green onions, spring onions)

Method:
- Marinate the chicken wings with the ginger-garlic paste, salt and the corn flour.
- In a wok (or kadai) heat oil and cook the chicken until almost done.
- While the chicken is cooking, mix the soy sauce, hot and sweet sauce, ground pepper, cooking wine, 1/2 tsp vinegar, red chili powder, corn flour, and minced garlic
- When the chicken is almost cooked, add the sauce mixture to it and cook for 1-2 minutes.
- Add the remaining vinegar and green onions and simmer for another couple of minutes
- Serve hot with your choice of dip or by themselves.
Helpful Tips:
- Skinning the wings will take away most of the fat
- You can make variations in the sauces used for the main sauce such as buffalo sauce or barbeque sauce, as per your liking.
- Cover the chicken while cooking to maintain the juiciness
